Anyone who might be contemplating the task of self catering a family reunion, a wedding, an anniversary party or any large functions is probably concerned about cooking for large groups.  There are a few strategic tips to keep in mind to ensure a successful catering event.

One of the first steps to take is to determine how many people will be attending the event.  Cooking for large groups begins with deciding the number of people to be fed.  Be sure to request RSVPs when mailing invitations, although this in itself is not a definitive means for a headcount.  Certainly some will fail to return the RSVP and still attend.  There are a couple of formulas used to arrive at a reasonable “guesstimate”, however.  The first is the total number of people invited.  If that number is over 200, approximately 25% of those will not attend.  If under 200, that percentage generally drops to around 15%.  The second formula tells you to take the number of total invitations mailed, multiply by 2 and then divide by 65% to receive an estimated number of people who will attend the event.  While none of these are foolproof, they are at least a starting point; about the best you can expect when cooking for large groups.

The next step is to decide on a menu.  And now that the number of attendees has been figured, you will be able to determine how much food will be needed.  There are many helpful books and web articles that provide recipes for crowds.  From 50 people to over 100 people, these recipes are designed for those who are cooking for large groups.  These informative guidelines will help you to calculate the quantities for each ingredient in each entrée, assist in choosing and planning to prepare appetizers, plan dessert menus and quantities and beverage amounts. 

Cooking for large groups will require different cookware and space than is used in home cooking.  If the function hall to be used has a kitchen, it will be helpful.  Check their space in refrigerators, ovens and counter space, and any type of dishware for cooking and serving large amounts.  Rental stores for catering needs will prove to be helpful in this regard, with chafing dishes, serving utensils and beverage containers. 

Serving the food is another consideration.  When cooking for large groups of people, a buffet system with self serve food selections work best.  A few people monitoring and refilling the food station will ensure that everyone is served adequately.
